🥞 Enjoy the authentic taste of Polish crepes filled with a sweet and creamy cheese mixture.
🧀 This recipe offers a delightful treat that balances light, thin crepes with rich, flavorful twaróg cheese filling for a satisfying experience.

  • Total Time: 50 minutes
  • Yield: 8-9 crepes 1x

Ingredients

Scale

1 cup (125g) all-purpose flour

3 large eggs

1 1/4 cups (300g) milk (cow’s milk or plant-based options like almond or soy, but skip coconut)

2 tablespoons melted butter or vegetable oil

2 tablespoons sugar (vanilla sugar or vanilla extract works best for that hint of flavor)

A pinch of salt

18 oz (500g) twaróg cheese or farmer’s cheese (this is essential for the authentic taste; avoid substitutes like cottage cheese)

2 optional egg yolks (add for a richer texture)

1/4 cup (50g) granulated sugar (you can swap with xylitol for a lower-calorie option)

2 tablespoons heavy cream or milk

1 teaspoon vanilla extract

Instructions

1-Gather all ingredients and utensils; sift the flour and measure the liquids accurately to start off right.

2-In a mixing bowl, whisk the 3 large eggs with the 1 1/4 cups of milk and 2 tablespoons of melted butter until fully combined.

3-Gradually add the 1 cup of flour while stirring to avoid lumps, creating a smooth batter, then mix in the sugar and salt.

4-Let the batter rest for 15 to 30 minutes; this step helps improve the texture and makes the crepes easier to flip.

5-Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.

6-Pour a small ladle of batter into the skillet, swirling it to form a thin, even layer, and cook for about 1-2 minutes until the edges dry and the bottom turns golden.

7-Flip the crepe and cook the other side for another minute until it is lightly golden.

8-For the filling, mix the 18 oz of twaróg cheese with 1/4 cup sugar, 2 optional egg yolks, 2 tablespoons cream, and 1 teaspoon vanilla until combined but slightly dry. Spread 2 to 3 tablespoons on each crepe, fold into triangles or roll, and pan-fry in butter until golden on both sides to set the filling and boost flavor.

Notes

🥄 Fluff and spoon flour into your measuring cup before leveling off to ensure light and tender crepes.
🍳 Don’t skip the final pan-frying step; it sets the filling and improves taste and texture.
🧀 Use authentic twaróg cheese or farmer’s cheese for the best flavor; substitutes like cottage cheese or ricotta won’t give the same result.
