– 4 boneless, skinless chicken breasts (150 180g / 5 6 oz each)
– 2 teaspoons olive oil
– 1 1/2 tablespoons brown sugar
– 1 teaspoon paprika
– 1 teaspoon dried oregano or thyme (or other herb of choice)
– 1/4 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– Finely chopped parsley for optional garnish
Instructions
1-Pound the chicken breasts evenly to 1.5cm (0.6 inches) thickness to ensure uniform cooking and extra tenderness this step makes a big difference!
2-Mix all the seasoning ingredients together in a bowl: 1 1/2 tablespoons brown sugar, 1 teaspoon paprika, 1 teaspoon dried oregano or thyme, 1/4 teaspoon garlic powder, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
3-Line a baking tray with foil and parchment paper for easy cleanup and even baking.
4-Place the chicken breasts upside down on the tray, drizzle with 1 teaspoon olive oil, rub it in, and sprinkle on part of the seasoning mixture.
5-Flip the chicken over, drizzle with the remaining 1 teaspoon olive oil, rub it in, and sprinkle the rest of the seasoning to cover as much as possible.
6-Bake for 18 minutes, or until the surface turns golden and caramelized and the internal temperature hits 165ยฐF (75ยฐC) this keeps it moist and delicious.
7-Remove from the oven and transfer the chicken to serving plates right away.
8-Let it rest for 3 to 5 minutes to hold onto those juices, then garnish with finely chopped parsley if you like.
