๐Ÿฅญ Experience the bright and zesty flavors of passion fruit in delicate macarons with perfectly crispy shells.
๐Ÿ’› This recipe combines tangy curd and fluffy marshmallow frosting for a unique and refreshing dessert treat.

  • Total Time: 2 hours 20 minutes
  • Yield: Approximately 20 macarons

Ingredients

– 100 grams egg whites

– 100 grams granulated sugar

– 105 grams almond flour

– 105 grams powdered sugar

– Gel food coloring (yellow recommended)

– 3 tablespoons unsalted butter

– 3 tablespoons granulated sugar

– 1/4 teaspoon fine sea salt

– 2 large egg yolks

– 1/4 cup passion fruit pulp (unsweetened)

– 2 egg whites

– 1/2 cup granulated sugar

– 1/4 teaspoon cream of tartar

– 1/8 teaspoon fine sea salt

– 1 teaspoon vanilla extract

– 1/4 cup white chocolate chips (optional)

– Passion fruit seeds (optional)

Instructions

1-First Step: Prepare your workspace and ingredients by sifting almond flour and powdered sugar together twice to ensure a fine texture. Separate egg whites, ensuring no yolk contamination to keep the meringue light.

2-Second Step: Whip the egg whites on medium speed until foamy, gradually adding granulated sugar until stiff peaks form, which is essential for a stable meringue base.

3-Third Step: Gently fold the almond flour and sugar mixture into the meringue using a spatula. Add the passionfruit pulp carefully to keep the batter aerated and achieve the right consistency for the shells.

4-Fourth Step: Transfer the batter to a piping bag and pipe small rounds onto a baking sheet lined with parchment paper. Tap the sheet lightly to remove air bubbles and let it rest for 30-60 minutes so a skin forms.

5-Fifth Step: Preheat the oven to 150ยฐC (300ยฐF) and bake the macarons for 15-18 minutes, rotating the tray halfway for even cooking. Keep the oven door closed to avoid disrupting the process.

6-Sixth Step: Allow the macarons to cool completely before removing them from the parchment paper to prevent sticking or cracking.

For the final assembly, sandwich the shells with the passion fruit curd and marshmallow frosting, adding white chocolate chips or passion fruit seeds if desired. This step lets the flavors mature, especially when stored properly. Keep in mind adaptations for dietary needs, like vegan options, to make this recipe work for everyone.
