Ingredients
– 5 peaches, peeled, cored, and sliced (about 4 cups)
– 1 quart (approximately 4 cups) jar of canned peaches, undrained
– 3/4 cup sugar
– 1/4 teaspoon salt
– 6 tablespoons butter
– 1 cup all-purpose flour
– 1 cup sugar
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 3/4 cup milk (buttermilk can be substituted for a tangy flavor)
– Generous sprinkle of cinnamon
Instructions
1-Prepare the filling if using fresh peaches: Combine the sliced fresh peaches, 3/4 cup sugar, and 1/4 teaspoon salt in a saucepan. Stir well and cook over medium heat for a few minutes until the sugar dissolves and juice is released. Remove from heat and set aside. If youβre using canned peaches, skip this step and use them undrained.
2-Preheat the oven and melt the butter: Set your oven to 350Β°F (175Β°C). Place the 6 tablespoons of butter, cut into pieces, in a 9Γ13 inch baking dish. Put the dish in the oven as it preheats until the butter melts, then carefully remove it.
3-Make the batter: In a large bowl, whisk together the 1 cup flour, 1 cup sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt. Gradually stir in the 3/4 cup milk (or buttermilk) just until combined, keeping the mixture smooth and lump-free.
4-Assemble the cobbler: Pour the batter evenly over the melted butter in the baking dish. Spoon the prepared peach filling evenly over the batter, then generously sprinkle cinnamon on top for that extra flavor kick.
5-Bake until golden: Pop it in the oven at 350Β°F (175Β°C) for about 38 to 40 minutes, or until the cobbler is golden brown and bubbly around the edges. Check out this no-churn ice cream recipe to pair with your cobbler for the ultimate treat.
6-Serve it up: Let it cool slightly, then serve warm itβs even better with a scoop of vanilla ice cream if you have it on hand.
