  • Total Time: 2 hours 40 minutes
  • Yield: Approximately 24 macarons

Ingredients

– 2 grams egg white powder (optional)

– 100 grams egg whites

– 100 grams white sugar

– 96 grams almond flour

– 75 grams powdered sugar

– 14 grams cocoa powder

– Brown food coloring (optional)

– 85 grams chopped white chocolate

– 28 grams heavy cream

– 1/4 teaspoon peppermint extract

– 3 tablespoons crushed peppermint candy canes

– 150 grams chopped dark chocolate or chocolate chips

– 100 grams heavy cream

– 1/2 teaspoon peppermint extract

– 85 grams white chocolate

– 1/4 cup crushed peppermint candy canes

Instructions

1-First, sift the dry ingredients including almond flour, powdered sugar, and cocoa powder to remove lumps.

2-Whisk the egg whites with white sugar until stiff peaks form, adding egg white powder if desired for extra strength.

3-Fold the sifted mixture into the meringue carefully to maintain the batter’s consistency.

4-Pipe the batter onto baking trays, tap to remove air bubbles, and rest for 30-60 minutes.

5-Bake at 300 degrees Fahrenheit for 15-20 minutes, monitoring closely for oven variations.

6-Prepare the peppermint white chocolate ganache by melting white chocolate with cream, stirring in extract and candy canes, then cooling.

7-Make the dark chocolate ganache similarly and let it cool to room temperature.

8-Assemble the macarons by piping fillings and sandwiching shells, then add the festive topping.

9-Store in the refrigerator for up to 5 days or freeze for up to 2 months for later enjoyment.
