When the pork reaches about 135 140ยฐF, brush it generously with the reserved glaze and broil for 2 4 minutes to caramelize, watching closely to avoid burning.
5-After roasting, transfer the pork to a cutting board and let it rest for 10 15 minutes. This helps the juices settle and keeps the meat tender. Finally, slice into 1/2-inch medallions, arrange on a platter with the pineapple slices, and spoon any pan juices over the top. Serve with sides like rice or vegetables to round out the meal.
