170g white bread cut into 2cm cubes

100g lighter mayonnaise
30g tomato ketchup
Quarter teaspoon paprika
1 lemon sliced into 8 wedges
250g pack of cold water prawns (defrosted and drained)
2 packs of Little Gem lettuce separated into leaves
225g pack of cooked king prawns (defrosted and drained)
Half a teaspoon cayenne pepper for serving
Instructions
1-Toss the 170g white bread cubes with 2 tablespoons olive oil, half a teaspoon mixed dried herbs, one-eighth teaspoon garlic powder, and a bit of seasoning, then spread them on a baking sheet.
2-Bake the bread cubes for 5 to 7 minutes until they’re golden, remembering to turn them halfway through for even crispiness.
3-Mix 100g lighter mayonnaise, 30g tomato ketchup, quarter teaspoon paprika, and the juice from 2 lemon wedges to create a smooth sauce.
4-Stir the 250g pack of cold water prawns into the sauce and season it to your liking for the perfect tangy flavor.
5-Arrange the leaves from 2 packs of Little Gem lettuce on a serving platter as a fresh base.
6-Top the lettuce with the prawn sauce mixture, add the 225g pack of cooked king prawns, and scatter the homemade croutons on top.
7-Sprinkle half a teaspoon of cayenne pepper over everything and serve with the remaining lemon wedges for a zesty finish.
