Instructions

1-First, sift almond flour and powdered sugar together to remove lumps and create a smooth base for the shells.

2-In a clean bowl, whip egg whites until foamy, slowly adding granulated sugar to form stiff, glossy peaks.

3-Gently fold the dry ingredients into the meringue, making sure the batter flows slowly off the spatula without overmixing.

4-Pipe the batter into rounds on a lined baking sheet, tap to release air bubbles, and let rest for about 30 minutes until a skin forms.

5-Bake at 310ยฐF (155ยฐC) for 15-18 minutes, adjusting time based on your oven and shell size for the best texture.

6-Prepare the filling by heating water and sugar to amber, adding cream and butter, then mixing in toasted coconut and chilling.

7-Assemble by dipping shell bottoms in melted chocolate, piping on caramel, sandwiching with another shell, drizzling more chocolate, and sprinkling toasted coconut.

8-Finally, refrigerate the assembled macarons overnight to let the flavors mature.
