1 large yellow onion, finely minced

1 1/3 to 1 1/2 cups whole milk
2 large eggs

1/4 cup light brown sugar

1 tablespoon yellow mustard
2 teaspoons white vinegar

Instructions
1-First, line a 6-quart or larger slow cooker with heavy-duty aluminum foil and lightly spray it with non-stick cooking spray. This makes cleanup easy and helps lift the meatloaf out later. In a small bowl, combine all glaze ingredients and whisk until well mixed, then set it aside for later use.
2-Next, in a large bowl, mix the ground beef, finely minced onion, dried stuffing mix, 1 1/3 to 1 1/2 cups whole milk, 2 large eggs, 2 tablespoons of the prepared glaze, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper using your hands until just combined. Shape the mixture into an oval loaf and place it on the foil in the slow cooker, then top with 1/2 cup of the glaze.
3-Cover and cook on low for 6 hours, allowing the flavors to blend beautifully. Once done, carefully lift the meatloaf using the foil overhang and transfer it to a baking sheet. Top with 2/3 cup of the glaze and broil until itβs sticky and bubbly, then slice and serve with the remaining glaze on the side.
