✨ This recipe offers a delightful balance of spices and natural sweetness, perfect for a wholesome treat.

  • Total Time: 1 hour 15 minutes
  • Yield: 1 loaf (10-12 slices) 1x

Ingredients

Scale

½ cup unsalted butter, browned

½ cup avocado oil, coconut oil, or other vegetable oil

3 large eggs

1 cup brown sugar (light or dark)

¾ cup pure cane sugar

1 teaspoon vanilla extract

1 ½ cups all-purpose unbleached flour

1 cup light whole wheat flour (white whole wheat or regular whole wheat)

½ cup oat flour

2 teaspoons cinnamon (heaping)

½ teaspoon salt

1 teaspoon baking soda

¾ teaspoon baking powder

1 teaspoon cream of tartar

2 cups grated zucchini (about 1 large zucchini)

to ½ cup granulated sugar

2 teaspoons cinnamon

Instructions

1-First Step: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan to prevent sticking. Grate fresh zucchini and squeeze out excess moisture if desired.

2-Second Step: In a large mixing bowl, combine the shredded zucchini, sugar, vegetable oil, eggs, and vanilla extract. Mix thoroughly until the wet ingredients are well incorporated.

3-Third Step: In another bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, and salt. Gradually add this dry mix to the wet ingredients, stirring gently until just combined to avoid overmixing.

4-Fourth Step: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Optionally, sprinkle some cinnamon sugar over the top for extra flavor.

5-Fifth Step: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean. For vegan or gluten-free versions, baking time may vary slightly.

6-Final Step: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. Serve and enjoy your soft snickerdoodle zucchini bread fresh or store as desired.
