Instructions
1-Begin by cooking 1 pound of rigatoni in a large pot of salted boiling water until it’s al dente, which takes about 10-12 minutes.
2-In a skillet, sautΓ© 2 teaspoons of minced garlic and 1 thinly sliced shallot in a bit of oil over medium heat for 1-2 minutes until fragrant.
3-Add 1/4 cup tomato paste, 1 tablespoon lemon juice, 1 teaspoon chili flakes, and 1 teaspoon Calabrian chili oil if using, stirring to combine and cook for another 2 minutes.
4-Pour in 1 cup heavy cream and let it simmer, then season with salt and pepper to taste, and mix in 1/2 cup grated parmesan cheese and 1 tablespoon unsalted butter for creaminess.
5-If adding chicken, season 1 pound of cubed chicken breast with 1 teaspoon each of dried basil, dried parsley, rosemary flakes, garlic powder, oregano, black pepper, and salt, then cook it separately until browned and add to the sauce.
6-Drain the rigatoni and toss it directly into the sauce, stirring in fresh basil for extra flavor.
