Ingredients

– 1 cup mashed sweet potatoes

– 3 cups all-purpose flour

– 1/4 cup sugar

– 2 1/4 tsp active dry yeast

– 1/2 cup warm milk

– 1/4 cup melted butter

– 1 tsp salt

Instructions

1-Prepare mashed sweet potatoes by baking or boiling the sweet potatoes until soft, then mashing them until smooth.

2-In a bowl, combine warm milk and sugar, then sprinkle yeast on top. Let it activate for 5-10 minutes until frothy.

3-In a large mixing bowl, combine the flour and salt. Add the activated yeast mixture, mashed sweet potatoes, and melted butter. Mix until a dough forms.

4-Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic. Adjust flour quantity if needed.

5-Place the dough in a greased bowl covered with a towel, and let it rise in a warm place for 1 hour or until doubled in size.

6-Punch down the dough, divide into equal portions, and shape into rolls. Place rolls on a greased baking sheet.

7-Cover the rolls again and let them rise for another 30 minutes.

8-Preheat the oven to 375ยฐF (190ยฐC). Bake rolls for 18-22 minutes until golden brown.
