๐Ÿ  Enjoy loaded sweet potato skins packed with savory toppings that make for a hearty and satisfying snack.
๐Ÿง€ This recipe combines creamy sweet potatoes, melted cheese, and crispy bacon for a perfect balance of flavors and textures.

  • Total Time: 1 hour 35 minutes
  • Yield: 8 loaded sweet potato skins 1x

Ingredients

Scale

4 medium sweet potatoes – The base of the dish, providing natural sweetness and nutrition

1 tablespoon olive oil – Used for brushing the skins to achieve that perfect crisp

1/4 cup milk – Helps create a creamy filling

1/4 teaspoon salt – Adds just the right amount of seasoning

Ground black pepper to taste – Brings a bit of spice to balance the flavors

1 cup shredded cheese – Melts beautifully for a gooey topping

4 strips of cooked and crumbled bacon – Adds smoky savoriness, making each bite more exciting

Sour cream – Provides a cool, creamy contrast

Chopped chives – Freshens up the dish with a hint of onion flavor

Instructions

1-First, preheat your oven to 400ยฐF (200ยฐC) and get those 4 medium sweet potatoes washed and dried. Pierce them a few times with a fork to let steam escape during baking. This step is crucial to avoid any unexpected pops in the oven.

2-Next, bake the sweet potatoes on the oven rack for 45-50 minutes until they’re soft inside. For vegan or low-calorie versions, keep the process the same but swap in your preferred toppings later. Once done, let them cool a bit so you can handle them safely.

3-Then, cut each sweet potato in half lengthwise and scoop out the flesh, leaving about 1/4-inch of it in the skin for structure. You can save that scooped part for another recipe or mix it back in. If you’re into similar dishes, try our loaded scalloped potatoes for a creamy twist.

4-Brush the skins with 1 tablespoon of olive oil, add salt and pepper, and pop them back in the oven for 10 minutes to crisp up. After that, flip them and load on the fillings like the 1 cup of shredded cheese and crumbled bacon. Bake for another 10-15 minutes until everything is bubbly and golden.

5-Finally, top with sour cream and chopped chives before serving. This method works for all dietary tweaks, so feel free to adjust as needed for a personalized meal.
