1 pound lean ground beef

1/2 medium onion, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1 tablespoon chili powder

1 can (14 ounces) black beans, drained and rinsed

1 jar (14.5 ounces) salsa (any preferred kind)

4 medium flour tortillas, cut into quarters

1 cup cheese blend (Tex-Mex style), shredded

Optional toppings: sour cream

chopped scallions

cilantro

avocado

sliced black olives

red onions

chopped tomatoes

fresh lime

Instructions

1-Brown the ground beef and chopped onion in a skillet over medium-high heat, breaking up the meat as it cooks.

2-Add the garlic powder, onion powder, smoked paprika, ground cumin, and chili powder, then cook for 8-10 minutes until the beef is fully cooked through.

3-Drain any excess fat if necessary.

4-Preheat the oven broiler on high and adjust the rack to the top third.

5-Reduce the stove heat to medium, then add the black beans, salsa, and quartered flour tortillas; gently toss to fold them in and spread evenly.

6-Heat through for a few minutes.

7-Top with the shredded cheese and place under the broiler for a few minutes until the cheese is bubbly and golden.

8-Serve immediately with desired toppings, and season with salt and pepper if needed.
