– 1/3 yellow onion (thinly sliced)

– 2-4 strips bacon (diced; you can use maple turkey bacon or pork bacon for variety)

– 1/2 avocado (thinly sliced)

– Pepper jack cheese (or your preferred cheese; amount to taste)

– 1 stalk of green onions (diced)

– 1-2 tablespoons oil

– 1 tablespoon unsalted butter

– Salt and pepper (to taste)

– Red pepper flakes (to taste)

Instructions

1-Preheat the air fryer and add tater tots, spraying with cooking oil if you want extra crispiness. Cook at 380 degrees Fahrenheit for 13-15 minutes or until they’re golden and crunchy.

2-While the tots are cooking, dice the bacon and cook it in a skillet over medium heat until it’s crispy and full of flavor.

3-Sauté the thinly sliced yellow onion in the bacon grease along with a knob of unsalted butter, tossing frequently and adding salt if needed. Pull them out once they’re grilled just right.

4-Add a drizzle of oil to the skillet and cook the eggs either fry or scramble them to your liking.

5-To put it all together, place the crispy tater tots in a bowl and top with a layer of pepper jack cheese. Pop it in the microwave for 15-20 seconds to melt the cheese perfectly.

6-Add the bacon bits, grilled onions, and cooked eggs on top for a hearty mix.

7-Finish with a garnish of red pepper flakes, diced green onions, and thinly sliced avocado on the side. Serve it up with ketchup or hot sauce for an extra kick.
