Ingredients

– 24 toasted baguette slices (or bagel chips or crackers)

– 4 oz. feta cheese crumbles

– 1/4 cup cream cheese

– 1/4 cup full fat or whole milk cottage cheese

– 3-4 sprigs of fresh rosemary

– Cracked black pepper to taste (optional)

– 1/4 cup honey for the hot honey

– 1/2 tablespoon apple cider vinegar for the hot honey

– 1/2 tablespoon hot sauce (such as sriracha) for the hot honey

– 1 clove finely minced garlic (approximately 1 to 1.5 teaspoons) for the hot honey

– 1 teaspoon red pepper flakes for the hot honey

Instructions

1-First, prepare the hot honey by mixing 1/4 cup honey, 1/2 tablespoon apple cider vinegar, 1/2 tablespoon hot sauce, 1 clove of minced garlic, and 1 teaspoon red pepper flakes in a microwave-safe bowl.

2-Heat the mixture in 15-20 second bursts, stirring each time, until it turns syrupy, then set it aside to cool for a few minutes.

3-Next, in a food processor, blend 4 oz. feta cheese crumbles, 1/4 cup cream cheese, and 1/4 cup cottage cheese until smooth and creamy, stopping to scrape the sides as needed.

4-Spread the whipped feta mixture onto the 24 toasted baguette slices, keeping it a bit textured so the hot honey sticks well.

5-Sprinkle 1/2 cup chopped pecans on top and add a small sprig of fresh rosemary to each slice for extra flavor.

6-Drizzle the cooled hot honey over the crostinis and finish with cracked black pepper to taste.

7-Serve right away with extra hot honey on the side, and enjoy the mix of creamy, spicy, and crunchy elements.
